Spring Salad Pizza

Who doesn’t love salad and pizza? This dish marries the two, creating a tasty harmony of textures and flavors.

Pizza is not something that is a part of my daily diet, but this is your not-so-average pizza. Made with whole grains, it is baked with herbs and spices, rather than sauce and loads of cheese, then topped with a mixed spring salad and homemade vinaigrette dressing.

When buying the pizza dough, you can use any variety. I am able to find 9-grain pizza dough at my local market.

Pizza Ingredients:

  • 1 lb. 9-grain Pizza Dough
  • 1 TB EVOO
  • I tsp. Garlic Powder
  • ½ tsp. Dried Oregano
  • ½ tsp. Dried Basil
  • ½ tsp. Dried Parsley
  • 1 ½ TB Parmesan Cheese
  • Grana Pagano Cheese (for garnish)

Salad Ingredients:

  • 4 Cups of Mixed Greens
    • 50% Arugula, 50% Spring Greens
  • Dressing:
    • Juice of 1 Lemon
    • 1 TB EVOO
    • 1 TB Balsamic Vinegar
    • 1 TB Dijon Mustard
  • Black Pepper (for garnish)

Prep time: 20 minutes, Bake time: 25 minutes in a 400-degree oven

The first step in prepping the pizza, is to let the pizza dough rest at room temperature for an hour before assembling. Once the pizza is ready to be assembled, line a baking sheet with parchment paper. Feel free to use a round baking sheet, I opted to make a rectangular pizza. Take the dough and evenly spread it on the sheet.

Now that the dough is ready to be seasoned, take 1 TB of EVOO and use a brush to apply the oil on the pizza. Next, add your spices and parmesan cheese once the pizza has been oiled.

Place in a 400-degree oven to bake for 25 minutes. You want to check your pizza to ensure that it doesn’t burn or get overly crispy.

When the pizza is finished baking, remove from the oven to cool for 10-15 minutes. You want to avoid serving the chilled greens over a hot pizza. As the pizza cools, you can now make the dressing for the salad.

Once the pizza has cooled, you can assemble your salad by tossing half of the dressing with the greens. Serve the remaining dressing at the table for dipping and extra garnishing.

When the salad is tossed, plate it over the pizza, avoiding direct contact with the pizza crust. Once the salad is served over the pizza, you can garnish [generously] with the Grana Padano Cheese. To grate the cheese, use a vegetable peeler and create large curls of cheese to sprinkle over the pizza. Sprinkle some black pepper on the cheese before serving.

 

Use a pizza cutter to serve and enjoy! It is honestly SO good.
