How to roll the perfect meatballs

When rolling chicken or meatballs, the meat tends to stick to your hands, preventing you from rolling perfectly round balls. As a trick to making the meatballs, wet your hands lightly with water before rolling the balls. You will need to keep wetting your hands after two or three balls are formed.

The water creates a barrier between your hands and the meat so that the meat doesn’t stick to your hands. This trick can also be applied when making matzo balls!

Notice here my hands are lightly moistened to roll the chicken balls.
